Bean Salad w/ Zuchini

6 ServingsThis is my favorite snack food. It is pretty simple but that is what works best for me.
Ingredients:
3 Scallions, Chopped
1 cup Lentils, Soak overnight
1 Lemon, Squeezed
2 tablespoon Olive Oil, Drizzled
1 sprinkle Fresh Parsley, Chopped
1 sprinkle Fresh Cilantro, Chopped
1 Tomato, Chopped
1 Zuchini,
Chopped
1 cup Beans of your choice, soak overnight
Preparation:
Soak beans and lentils over night and drain next day. Add all ingredients together and sprinkle w/ fresh cracked pepper. I am a bean freak. I interchange different beans all the time and sometimes I change the herbs depending on what is available. This is my favorite for breakfast. It keeps me going until lunch!!

i actually just read about the kidney beans....jeez, thank god i have never gotten sick. eek, i will switch those beans.

Thanks elizabeth, I've been trying to research that because I love beans and thought I wouldn't be able to have them again now that I'm going raw.

i just read that too ,try using adzuki beans instead

sounds good except oone problem, im pretty sure kidney beans are poisonous when raw, you might want to look into that
