Apricot Lime Cooler

Wanting something light and refreshing to finish my day of fasting from solid food- I came up with delightful little smoothie. You will be coming back to make seconds!

Ingredients: 

2 organic apricots, pit removed, and chopped
1 teaspoon lime juice
2 teaspoon raw honey (to taste)
2 tablespoon of irish moss gel
1 tablespoon lucuma powder
1 ice cube

Preparation: 

Add all ingredients to blender except ice cube and blend briefly till liquidfied. Then add ice cube and blend till liquidfied. Spoon it right out of glass and enjoy!

For a slight variation- blend two ripe nectarines with one apricot and the rest of the ingredients. If you’re not familiar with Irish Moss and/or dont have it on hand- you could try experimenting with some pre-soaked chia seeds instead also.

great idea of combining the lime with the apricot. it sounds like a nice balance.
