Almond Orange Cookies

12+ cookiesI found another tasty way to use up that wonderful almond pulp left over from making almond mylk!
Ingredients:
almond pulp from making almond mylk
Preparation:
Take the pulp left over from making almond mylk, and add the juice of 1-2 oranges (depending on how much almond pulp you have). Mix well and spread on dehydrator sheets. Dehydrate at 105 degrees for 5-10 hours depending on whether you spread it thick or thin.
Spread Thin: Makes delightful little thin crisps
Spread Thicker: Makes a spongy light cookie, which a little bit of chew (hard
to
describe texture)
The crisps remind me of something “sinful” you would get if you went out for tea…yum!

I tried to make these yesterday. They came out very crumbly and not as tasty as I expected. I took Ann's suggestion of adding the juice of 2 oranges and agave, but still very pulpy tasting. I think I will throw it in the processor and use it for pie crust instead.

I quite enjoyed these. A little crumbly, but a very good flavour. I needed this recipe--my almond pulp was feeling quite lonely in the fridge. They still taste a little too...almond pulp-y lol, if you chew them too long. I would definately recommend adding the juice of two oranges, if not more. Hm, adding agave might be a good idea, too, just to even out that unmistakeable almond dough taste.

I think these sound great. I'm experimenting with the gobs of almomd pulp that I've been saving. This is next on the list!

Hooray, simple and tasty! I imagine the finished product depends a lot on the quality of the oranges. Too bad about that citrus frost this year...
I wanted these sweeter, so I ended up glazing them with wildflower honey. Only then did they gain widespread acceptance with my cooked-veg*n roommates. Went wonderfully with a cup of black tea.

These sound great and delightfully simple. I think you may have forgotten to add "orange juice" to the ingredients list.
