Affordable Coconut Butter!

I am so excited to have figured out how to make coconut butter at home! And for practically nothing! No more 8 dollar jars of Artisana for me!

Ingredients:

3 cup Coconut (mature or dehydrated)
1½ tablespoon Coconut Oil

Preparation:

I guessed on the amounts…

Simply process coconut until it is a fine flour, then add in a little bit of oil at a time.

The consistency should be rather liquidy.
(If you have never had coconut butter before it really might be difficult to tell if you’ve got it or not. There should not be any detectable peice of coconut left though.)

The mixture will congeal at room temperature.

My favorite thing to do with coconut butter is make chocolate mousse to eat with raw strawberry shortcake…Recipe coming soon!

Disclaimer: Depending on the cost of coconut where you live this might not be cheaper, as some of the comments on this page indicate. Check the price of the amount of coconuts you’ll need before jumping up and clicking your heels, I ‘spose. I live in Florida right now so coconuts are free. However, dehydrated coconut is really cheap if I remember correctly…

Hi Bonnie,
I sympathize with you on the price of such items over there in Kiwiland [I'm a Kiwi now living in UK]. In case you havent come across this information already, I researched coconut butter and found that creamed coconut seems to be the same thing. I dont know if you can get organic creamed coconut over there, but you can get boxed sachets of it, especially at Asian/Indian grocery shops. You might already have seen this but in case you haven't, here's a great, but lenghty recipe for coconut butter:

$8!! Coconut butter here is $11.99!!!

If you have a dehydrator, it's easy and cheap to make the dried coconut.Just crack open a couple of mature coconuts and run the meat through your juicer. The cream that comes out is amazing on fresh fruit!! Take the pulp, throw it on a teflx lined tray an dehydrate until dry and flaky. So much cheaper than buying it and you save on the packaging. I'm so excited you posted this. Coconut butter is my biggest raw weakness!!

Coconut butter in New-Zealand is super expensive. About $30 for a tiny jar-this will save me heaps of money!!

I just checked, and 1 pound of raw dried coconut is about 8 cups, and it is at least as expensive as the 1-pound jar of coconut butter. It seems like it should work with the fresh mature coconuts, though - will be cool to see if you guys do it!

Hey Tree Ear, I'm sure it would be stellar with fresh mature coconut as well. I have a bunch of them lying around in my closet (I live in Florida where they grow in abundance) but no motivation to crack 'em open. Tell me how it is. Maybe you'll inspire me!

I don't see how this saves money, because the raw dried coconut is not very cheap - when I compare the weight, it is very similar on cost. What brand of raw dried coconut are you using? I also use the Wilderness Family Naturals brand of coconut butter, which is more like $6, I think.
