This sweet potato pie was really yummy! My friends loved it! I didn’t have a pie pan, so I used a skillet, which explains the funny, flat, long shape! Enjoy!
1 pound Sweet potato, washed, peeled, and cut into small pieces
½ cup almond milk
½ cup cold-pressed olive oil
.66 cup raw applesauce
½ teaspoon ground ginger
½ teaspoon ground cinnamon
1 cup raisins, soaked and pureed
.66 cup raw applesauce
2¼ cup raw oat groats,
ground
Crust:
(I recommend doing this step first to give it a little time to set)
Pour oat groats into food processor with the ginger and mix them up. Add olive oil and applesauce and whip! Spoon out onto pie pan and spread with spoon. Set aside or in fridge.
Filling:
Soak the raisins for 20 min. while preparing sweet potato. Throw sweet potato slices into food processor. Blend and add almond milk. Blend till smooth. Add in raisins and mix that sucker up till you’re sure everything is blended (I had a little trouble here, and the final product had bits of sweet potato strings, so make sure you
blend well!). Add in applesauce and cinnamon and blend till smooth and creamy. Pour filling onto crust and make sure it’s evenly spread out before covering it and placing it in the fridge. Let it set for several hours, then serve plain or with leftover pureed raisins!
