A yummy “cream cheese” icing, from Chad Sarno.
Goes well with the Carrot Cake recipe I have posted here.
2 cup raw cashews, soaked
2 tablespoon lemon juice
2 tablespoon dates, soaked
1 tablespoon coconut butter
1 teaspoon vanilla extract (or half a vanilla
bean)
¼ teaspoon salt
Place all ingredients in a high-powered blender and process until creamy.
