This was inspires by rawmumma’s raw-eo smoothie, and perked me up very nicely before I had to go to work.
1 Young coconut, Opened, drained and scooped
1½ tablespoon Goji berries, Soaked in a little water
2 Medjool dates, Soaked in a little water
1 tablespoonCacao nibs
½ teaspoon Maca powder
¼ Vanilla bean, Cut up to small pieces, vanilla extract is also ok
1.Open coconut and drain water into a cup. Sneak a few sips.
2.Scoop out all the meat, and throw into blender. Add all the rest of the ingredients and however much of the water you need. (sometimes there’s too much)
3.Blend until completelysmooth.
4.If you have any leftover coconut water and smoothie is prepared, drink it, or send it to me.
