I might be hallucinating but this tasted just like chicken salad to me! Party in the Hen House!
¼ cup cashews
¼ cup water
1 teaspoon tumeric
1 teaspoon celery seed
1 teaspoon dry
mustard
sprinkle garlic powder or hing
1 cup walnuts
2 stalks celery
1 tablespoon chopped pickle, pickled ginger, or apple cider
vinegar
¼ cup grapes (optional), sliced
1 cucumber, for putting salad on, chopped
¼ cup sliced green onion mixed in at the end!
sprinkle yellow
bell pepper if you have it.
optional but great to add is chopped apple, raisins, or collard greens at end.
Blend the cashews, water and spices together until smooth (I use a blend teck for this). Then pulse the walnuts and celery in food processor until small chunks remain. I also threw in a few mushrooms. Throw in green onions, raisins and apple (optional) in at the end.
Wait until the very end to add the pickles if you do. Or add a little on each portion. Serve and enjoy on celery rounds, in scooped out peppers, in a tomato or with favorite bread or crackers.
I made this into crackers with everything except the pickles- so it gives you another option. Add some flax to the crackers to help hold them together and a cup of carrot pulp from juicing. Also for the chik n biskit crackers shown here I ran out of cashews so I used half a cup of sunflower seeds. You will have to add a little water to get it smooth.
I like a few grapes thrown in too. Serve in peeled cucumbers sliced in half and seeds taken out- like raw hogies or on slices of cucumber if it is for an hordeurve. Or of course on raw bread with a little spinach if you have some!
