I love greek salad and this satisfies my craving for it. Tastes just like the original
For the salad
2 tomatoes chopped
1/2 cup sliced olives black or green
1 cucumber diced
handful of fresh basil or oregano
leaves
pinch of salt
6 tablespoons of apple cider vinager
5 Tablespoons of extra virgin olive oil
1 head of romaine
lettuce
1/2 cup of Red Onion Chopped
Pinch of pepper
For the Feta Cheese
1/2 cup of raw unsalted cashews
juice from 1/2 a lemon
Pinch of sea salt to taste
2 cloves of garlic
Throw all the salad ingridents in a bowl and mix
Put the nut cheese ingredients in the blender and mix until smooth and add to the salad.
Toss and serve! Enjoy
