these, my friend, are quite fantastic- like you! (i'm sneaky, see? after complimenting the crackers, i sneakily complimented you! oh ho ho, what fun we're having!)
You will need:
a knife!
a cutting board!(optional)
a bowl
a dehydrator!

but mostly,
1+ eggplant
apple cider vinegar
waterr
mmmmm!
So, first what you do is cut the eggplant into slices- as thin or thick as you'd like. I like 'em about a centimeter to a 1&1/2 centimeters thick 'cause then they're like rice cakes.
secondly, you dehydrate them. i'm not sure what temerature,because my
dehydrator is a peice of crap, thermostat-less dehydrator.(thanks a lot, Wal-mart)
thirdly, wait until they are like, really dry and pretty crispy.
fourthly, put them into a bowl which has about a cup of water and a tablespoon of apple cider vinager in it. soak the eggplant 'til
they get softy.
fifthly, re-dehydrate them until they get super-duper dry and crunchy like rice cakes.
sixthly and finally, EAT THEM FANTASTIC!
also, a super modification for all-dressed crackers is: after you soak 'em, sprinkle a mixture of paprika, cayenne pepper, and pepper onto your eggplanty wonderfuls. cheers!!
