This dish is very simple, very tasty and very filling!
I've had some chia seeds sitting in my pantry for a few months now and, after a little research, made some chia seed gel (1/3 cup chia seeds mixed with 2 cups of water or fresh fruit juice - or perhaps a nut milk).
Haha, it was very exciting to wait, and watch, those little seeds to soak up the water - a minimum of 10 minutes - and the gel can be stored in the refrigerator, in a sealed container (for up to 2 weeks if mixed with water). It reminded me of pearl tapioca which I haven't eaten since I was 7 years old!
1/3 cup chia gel
6 strawberries
1 kiwi fruit
1 medjool date
Obviously, any variation of fruits may be used. These ingredients are what I laid my hands on first this morning! Can't wait to try it with papaya, banana, grapes, etc.
Finely chop fruit and add chia gel. Or you can throw it all into a blender for a pulse, or three, and spoon into a bowl. Mmmm, a sprinkle of nuts would be a good addition too.
