4-6This turned out so pretty I had to share. I love using my spiralizer for carrots because it produces such cute little curls. Since it was already out, I used it for the yellow pepper too and it worked great!
Ingredients:
1 fat carrot, spiralized using noodle blade
1 chayote with skin, spiralized using noodle blade
1 yellow pepper, spiralized using flat blade
1 green onion, chopped
small
small handful of pea shoots
Preparation:
Mix everything together in a small bowl. Can be eaten as-is or mixed into a bed of greens.
