Servings:
At least 4 servings as a side saladA colorful and refreshing chilled root salad is a perfect starter or side for a summer meal. Serve it on a bed of greens or wrap it in a large collard leaf or tortilla for a quick and filling lunch.
Ingredients:
3 med carrots and one cuke, grated
1/4 cup fresh mint, chopped fine
Juice of 2 clementines and 1/2 a lemon
1 tsp curry powder
1/4 tsp black
pepper
1/2 tsp salt
Preparation:
Mix all ingredients in a large bowl and toss well.
Chill and serve.
Drain if you are using for wraps, it's a juicy salad. The juice makes a nice dressing for green salad.
