I'm going through a bit of a phase where I'm making up my own recipes and everything is tasting amazing! This was last nights dinner, I didn't realise the nori wasn't raw when I bought it but its tasty. I could have eaten a much bigger portion though so you might want to bulk it up a bit!
2-3 sheets nori, cut into strips
Handful cherry tomatoes
1 carrot, grated
1/3 courgette, grated
Small handful basil
For the Sauce:
1/2 avocado
Small handful basil
Juice of 1/2 a lemon
Water
Blend/process the sauce ingredients,adding water to get it to a creamy consistency but not too thick. Put all the other ingredients on a plate and pour the sauce over. Mix it up a bit so everything gets coated and the nori goes soft, and enjoy!
