I made this for dinner last week and it was so nice I made it again the next day! I wanted to get all the colours in but didn't have anything blue, blueberries would be a good addition though.
1 tomato
1 carrot, grated
1/2 a yellow pepper
Few leaves chard cut into strips
1 beetroot, grated
1/2
avocado, sliced
2-3 raw olives chopped into little bits
Handful sprouts of choice (I used a mix from a seed packet)
Juice of 1/2 a lime
Put everything together on a plate/bowl and squeeze the lime juice over the top. Enjoy!
