Brazil nuts, lettuce and tomatoes in a creamy cashew sauce (mayo?).
Another throw together (I gotta get organized), that came out quite good.
The nuts are not soaked, but I will be tweaking the recipe from time to time
½ cup brazil nuts, chopped
½ cup cashew nuts
½ lemon, juiced
¼ teaspoon dry mustard
½ teaspoon
nutritional yeast, optional
water
nama shoyu, to taste
favorite large leaf lettuce
½ tomato, chopped
Put chopped brazil nuts in a bowl and put to the side.
In the food processor, place cashews, lemon juice, mustard, nutritional yeast, and a little water. Process till smooth and creamy.
Sprinkle the nama shoyu liberally over Brazil nuts and mix.
Pour or scoop cashew sauce (a little or a lot, save unused portion for other recipes) over the Brazil nuts and mix in.
Scoop the mixture over your favorite large leaf lettuce.
Top it with chopped tomatoes.
Wrap it up and enjoy.
