Nice versatile salad that you can customize to your own taste. Add whatever vegetables you like. I make this on Sunday and it lasts all week.
Ingredients:
Broccoli, Chopped
Baby carrots, Chopped
Red Pepper, Chopped
Cauliflower, Chopped
Celery, Sliced thinly
Spring Onions,
Sliced thinly
Cucumber, Cubed
Raisins
Pumpkin seeds
Almonds, Broken
Walnuts
Black Sesame seeds
Olive Oil
Apple Cider Vinegar
Celtic Sea Salt
Preparation:
Chop all vegetables very small. Add nuts, seeds and raisins. Start by adding 3 Tbsps EVOO and 3 Tbsps ACV. Mix and taste. Add EVOO and ACV 1 Tbsp at a time until you reach a taste that you like.
