serves 1This is quick and easy and deliciously satisfying. I eat it when I am craving cooked foods or it is raining outside.
Ingredients:
1 big chunk butternut or other squash
1 heaping spoonful of salsa
1 dash of sea salt
Preparation:
grate the squash (if you have a cheap ass blender like I do)
Put it in the blender with water added to desired consistency
Add a spoonful of salsa and keep blending.
Yum.
(If you like, you can warm it ever so slightly before eating to add to the soup feeling)
