makes 3-4 taco-sized tortillas

I wanted a lighter tortilla that wasn’t full of buckwheat and wasn’t made entirely out of flax seeds… and I had leftover veggies from making noodles so I used them up and these came out nicely!

Ingredients: 

1 yellow squash, shredded
1 zucchini, shredded
1 carrot, shredded
3 tablespoon ground flax seed
3 teaspoon desired seasonings (curry & red pepper; paprika & cumin; etc), to taste
water, as needed

Preparation: 

Puree veggies in food processor. Add in flax seed and seasonings (if desired) and pulse to mix. Drizzle in enough water to make a spreadable batter – like the consistency of mashed bananas. Spread out onto paraflex lined dehydrator sheet(s) and dry at 110-115 for 6-8 hours.

After about 4-5 hours of dry time, flip them over onto the dehydrator tray (with no sheet on it). Continue to dry until not gooey but still flexible.

Eat with your favorite fillings!

RCBAlive: you could definitely leave out the carrots! Just add some more zucchini or squash, I guess... as long as there's something there instead of the carrots they will be fine... I have had to cut WAY back on my carrot consumption as of late (began to turn orange!!), so I'll be making these without the carrots, too.

Angie: I keep mine wrapped in paper towels, and in a zip-bag, in the fridge for 3-4 days. After the 4th day mine started looking a little gooey so I threw it out. Thankfully I usually eat them too fast for this to happen!

These sound really great KhaasLadki. I am trying to eat low glycemic and low fat food. What do you think the impact would be if I didn't add carrots? Can I just add more of the other veggies?

Pam, would you please share your tomato and zucchini wrap?

awesome recipe!!!! I eat these too fast...I keep having to make a new batch almost every day. This is by far my favorite bread/cracker/tortilla recipe.

I didn't soak my flax seeds, I just ground them up and mixed them in - it gets the 'mashed banana' consistency without soaking them. Glad everyone seems to like this! I just got through eating one ;-).

Do you soak the flax seeds to get a gooey consistency? Or does it get that 'mashed banana' consistency on its own? I can't wait to try this!

Yay! I'm finally going to power up my dehydrator. It's been idle because I don't want to make heavy, grain, nut and seed laden foods that sit in my gut like bricks. I do want a wrapper that isn't always a green leaf. This looks rawesome! Thanks!

Thanks Khaas for the info just wanted to make sure I want to make this recipe! I actually don't make that many recipes unless it is really easy and amazing. If it has too many ingredients, or is too complicated I may admire it or like it but might not ever get around to making it, but this one is easy and looks RAWmazing!

Also about the joke I know it is both FUNNY but then you go woa that is not really funny but kinda weird! But when she told me on the phone it I laughed very hard out loud because it was so unexpected that it was funny when she told me the waiter's reaction...during the conversation I was like oh wow good, oh great you found a salad place, then when she talked about the raw peas I was like wow they opended each pea pod...then she told the rest of the story and it was kinda funny...wanted to share some raw humor! :D

I just got off the phone with my friend and totally funny true story: She is in Phoenix, Arizona on a business trip she is raw and loves to try to find raw organic foods in cooked restaurants if she can't find a raw or vegan restaurant. She was super happy to find a salad type of place and when she saw the green peas she wondered and aske the waiter if it was "RAW". He looked at her and said "Why yes it is RAW! We just opened the can and poured it out into the salad bar, we didn't even have to cook it!". :D Totally funny true story that happened today, I laughed SO SUPER HARD that was like the most hilarious thing I ever heard, because it was not frozen, or because they did not have to microwave or "cook" it the waiter considered the peas to be "raw" from the can....

Yes I think yellow squash is the same as yellow zucchini... I'm sure any variety of squash/zucchini type veggies would work wonderfully here, anyway!

WOW NICE I love this recipe it looks great too I bet it tastes RAWmazing! I think the future of raw is less to no nuts or dehydrating or headed in that direction but dehydrating is fun to do still and moderation is always a good thing. Quick question yellow squash is that yellow zucchini?
