This soup is super quick and easy. I can easily make it in the morning and pack it for lunch, even when I am in a hurry. I originally was going to make it tomato basil soup, but I liked it all by itself, so I left it alone.
1 large tomato (or equivalent small tomatoes)
¼ cup sunflower seeds, soaked and drained
1½ cup water
2 teaspoon agave, honey or date syrup, more or less to taste
salt and pepper, to taste
1. Throw everything in the blender and blend until smooth and warmed!
2. Taste to adjust seasonings. I like mine kind of sweet, like Campbell’s tomato soup.
3. I fill my thermos with hot water and let it sit so that it is prewarmed when I add my soup.
I have been reducing the seeds too. I now put in about half as much.
1/4 cup of sunflower seeds was too rich for my taste. Reducing the seeds to a Tablespoon, dropping the sweetener and reducing the water made this more to my taste but not as creamy. Thanks.
2rele, the sunflower seeds give it a creaminess like Campbell's cream of tomato soup
ungrateful-- gagging at the thought of raw tomatoes? really? =) if you're talking about those horrible mealy, almost white, ones you get at conventional super markets then i totally get that... but have you had like an AMAZINGLY ripe in season heirloom tomato?
What is the purpose of the sunflower seeds? Do you use it to thicken the soup? Sounds good. I may have to try this!
This looks good. I just bought tomatoes at farm market today and have been craving soup, this one looks good. I sometimes like to add chunks of red pepper for a different twist(and it blends pretty well).
I hope you like it! I am going to work on a couple more this weekend. Before becoming raw, I lived on soup. I will admit that I don't get the same pleasure from pushing the blender button as I did from stirring a pot, but I do still love to eat them.
Yes everyone is coming with the soup recipes just in time.. Last year it seemed everyone was doing the NUT dishes like crazy in the cold seasons. Thanks for this recipe I will have to try it tomorrow for lunch.
Peace and Blessings
Ohh, that is nice. I have been working on my tomato soup and sauces. The sweetness and fat content are key, I think. either that or I need to start not gagging at the thought of raw tomatoes :)
It is an insulated container that was about $8.It's great, it keeps stuff pretty warm. And I think I got it at WalMart or Target. Don't know where you are and what stores you have. If you are in the US, you are probably near one of those two!
YUM! I love just plain tomato soup. I was just wondering, what is that little soup container you have? It looks like some sort of "to-go" container, where in the world did you find that?
