Does anyone save young coconut meat for an extended period of time? If so, how do you save it and for how long? I am doing a liquid fast and don't want to throw away all of that beautiful coconut meat.

Try an advanced search in the Forums. I think there was a discussion some time ago about blending and then freezing young coconut meat. I know you can freeze whole Thai coconuts.
I save mine in air-tight container with a 1/2 a lime in the container. This helps with the freshness. Will last 3-4 days max.
