In this raw food cheesecake, dried coconut is used as the bottom layer (to replace the crumbled graham crackers), macadamia nuts are used for the bulk of the "crust" layer, and cashews make up most of the "cheese" portion.

These Sweetheart Vanilla Macaroons dipped in Dark Chocolate are the perfect raw vegan Valentine’s Day treat. This dessert uses antioxidant-rich superfoods such as raw cacao and lucuma powder, and is quick and easy to prepare. The combination of dark chocolate with the vanilla and caramel undertones of the coconut macaroon cookie base will satisfy anyone’s sweet tooth. Strawberries. Chocolate. Macaroons. Vanilla = a perfect Valentine’s Day!

My raw version follows the same guidelines as the original with two thick layers of chocolate cake, an apricot jam center and smothered in rich chocolate frosting! It is wonderfully rich and chocolatey without being too sweet and looks gorgeous topped with Cape Gooseberries.
