2 tablespoon nutritional yeast
¼ cup pumpkin seeds
1 teaspoon curry powder
1 zucchini
Recipe Directions
Spiralize or grate the zucchini into noodles. Grind up the pumpkin seeds in a coffee grinder or food processor. Sprinkle the nutritional yeast, pumpkin seeds, and curry on the zucchini. Stir and enjoy! I chopped up some baby tomatoes and mixed those in. Maybe raisins, or olives would be good too?

I added some olive oil to this and it was really good. My picky husband loved it!

Sounds delicious and simple, will give it a try, have 1 zucchini left in the fridge :)
