Ingredients
1½ pound tomatillos, Remove papery husk and rinse
½ cup chopped white onion
½ cup cilantro leaves
Salt to taste
2 Jalepeno Peppers, stemmed, seeded and chopped
1 tablespoon fresh lime juice
¼ teaspoon sweetener (sugar, honey, whatever)
Recipe Directions
Place all ingredients in a food processor and pulse until finely chopped and mixed together. Season to taste.

I love tomatillos and cilantro -- so this recipe looks like a winner. Definitely saving it to my recipe book and giving it a try.

Another new recipe for my list of old stand-bys. Freshly made taste so much better. Plus it's more nutritious, and you get so more. More bang for you buck, for sure.
My contribution about tomatillos: They're in the nightshade family, making them closer to eggplants than tomatoes. More useful, they will last about 2 weeks in the fridge, and longer if you remove the papery husks and put them in a sealed bag.
I plan to add variety by including fruits like pineapple, peaches, and especially mangoes. Fresh mango salsa! Can't wait.

Made this up for the raw potluck (only used one jalapeno tho) - along with the no-wheat thins crackers. Everyone loved this salsa! Great recipe!

Just made a batch of this and it is fantastic. Love it. queera@gmail.com a tomatillo is in the produce section it looks like a green tomato but has a papery outside that you just peel away before using. Tast nothing like a tomato though. Has a unique fresh taste.
