2 or 3 servings
Ingredients
2 cups mango (frozen)
1½ cups pineapple (chopped)
1½ cups young coconut water
½ cup young coconut flesh
1 tablespoon lime juice (optional)
1 tablespoon agave syrup (optional)
1 teaspoon vanilla extract
1 cup ice cubes
Recipe Directions
1. Blend all of the room temperature ingredients in your blender until fully blended and smooth.
2. Add the frozen mango and ice cubes and blend again until creamy, thick, and frosty. Pour into tall serving glasses.

I made this smoothie last night to accompany a spicy salad and it was wonderful. It's not always easy pleasing everyone in the family but my omnivore teenage son cleared the blender and I'm just glad I bought enough to make some more! If you have a difficult time finding the young coconut, try an asian market. I live in Okinawa which is a subtropical island, so we don't have a difficulty here but I imagine I might find it more difficult in the US.
