Ohh these sound good. How big of a piece of ginger should I use? Like as big as the spoon part of a wooden spoon or....?

I am very grateful to you for this recipe, it's very inspiring and gave me lot of new ideas. I made my cookies with pumpkin instead of banana and risins and sunflower seeds instead of almonds and sprinkled those with more cinnamon. Mmmm, they are so yummy!

I'm really bad at making recipes for what I make up!! I used probably 3/4 cups of cut up pieces. But really use more or less depending on your tastes! Ginger is so strong that even a small amount will make it gingery...I personally like very gingery!
