How finely ground should the wheat berries be? Do you use a high speed food processor, or just sprout the berries for a while so they blend easily?

sounds delicious. do you know if millet sprouts can be used as a substitute for the wheat berries?

I sprout the wheatberries over night and then put them in my cuisineart and pulse until they are about 1/4 the original size. Consider all dry ingredients as flour, and the wheatberries are a the more textured carb in this bread for chewiness but are still pulverized.

I make the loaves about the size of my hand each and as tall as my dehydrator will allow.

I choose the wheat berries for the texture, really chewing and great mouth feel. If you try it with millet sprouted let me know how it goes!
