Ingredients
PESTO
1 box fresh baby arugula
2 stalks celery
1 tablespoon raw olive oil
1 small shallot, diced
1 tablespoon lemon juice
1 pinch herbamare (optional)
1 tablespoon water (or as needed to keep the blender moving)
RED VINEGAR
1 red bell pepper
2 tablespoon ACV
½ tablespoon good quality paprika
½ lemon , juiced
Recipe Directions
if using a magic bullet: just put all pesto ingredients (you’ll have to add arugula in increments) in one of the containers. screw lid on and blend to a creamy consistency. (not to be an infomercial, but this thing gets sauces PERFECTLY creamy!).
repeat process for vinegar recipe in another container.
you can use a small food processor or blender for the pesto, but will need a blender for the vinegar i fear because it will leak otherwise.
note: the vinegar, once settled, will create a “froth” that i found IDEAL for spooning on the tips of my tacos (for a little color kick).
