Yield
20 smallish balls or flat cookies
Ingredients
1 cup raw almond butter
3/8 cup local honey or agave nectar
2 tablespoons carob powder (optional)
Ground coconut (for rolling)
Ground cacao (for rolling)
Salt
Cinnamon
2 cups rolled oats (ground slightly)
Recipe Directions
1. Mix the almond butter and honey/agave.
2. Add 1 1/2 cup oats and carob if using. Mix until it’s pretty stiff. Add more oats if needed.
3. Make up a mixture of more ground oats, coconut, cacao, cinnamon, and salt.
4. Start pinching off bits of almond mixture, roll into balls using your palms, and roll in the dry mixture. Store in the fridge (the longer they chill, the better they get).

By rachleThese are a healthy adaptation of my favorite summer camp treat: peanut butter balls. But these are much better!
Truly an improvement, including the lack of summertime under the fingernails dirt!
These are great for kids to help with!
