Recipe Directions

1. Mix flax, sunflower, maple, vanilla and ginger. The ginger can either be juiced and the pulp and juice added, or pureed in the food processor.

2. Keep mixture moist and loose for spreading. Spread mixture as thin as possible. I like to make into round crackers, which is an exercise in patience (I am experimenting today with using a non stick mini muffin pan to dry them in). You can add more maple syrup, but then it might need to be longer in the dehydrator. The same goes for the ginger.

3. Dehydrate at 105 Fahrenheit for 5-6 hours on Teflex.

4. Flip over, remove Teflex, and dehydrate another 4-5 hours until desired crispness.

They are delicious and can be made into little flax rounds.

I added more of both yesterday. It was about 4 tablespoons minced ginger and juice and 3/4 to 1 cup maple. Can use a few dark flax seeds mixed in for appearance.

What can I use in place of Vanilla Essence? Vanilla beans? Vanilla flavoring? Thanks, sounds great :)

You could but then they would be simply sweet and gingery. Let me know what they are like if you do.

These look fabulous, I do believe I have everything I need to make them here already. Could I substitute agave for the maple syrup you think?

I used organic vanilla extract - we call it is essence in UK and Australia and.....

Welcome, necessity is the mother of invention. I ate some similar from Wholefoods in San Jose, but they are only in CA. Nothing so nice on East Coast.
