Recipe Directions

1. Start with the coconut butter. I had just bought a fresh jar, so I ran it under warm water for several minutes. The whole jar doesn’t have to melt. Just enough to get about 1 cup.

2. Pour melted coconut butter into a small-medium sized bowl. In a separate bowl, mash two bananas. Put bananas in mixing bowl with coconut butter.

3. Proceed to add cacao powder, agave nectar, and coconut milk to thin out the “batter”.

4. Finish by adding the peppermint oil to taste.

5. Since I just bought an ice cream maker, I put the mix in the ice cream maker and waited till it was done.

6. If you do not own an ice cream maker, place mix in a container and put it in the freezer. Stir the mix every 30 minutes or so until desired consistency.

I swear they taste just like Thin Mint Girl Scout cookies.

This ice cream incorporates the refreshing, mouth-cooling peppermint and rich cacao-chocolate. An awesome treat at any time!

Mine is still freezing, but the “batter” alone was just so amazing because it tasted just like Thin Mint Girl Scout cookies!

The picture is not my own. I imagine the finished product to be of that texture and color. I’ll definitely have pictures when it’s done!

RawKidChef, that sounds gooooood...are you both on giveittomeraw? (Audrey & RawKidChef)?? I'm on there, same user name...they have messaging there, so we could keep in touch easier. If you're not on there, get on! It's like a raw myspace/facebook, but BETTER!

This sounds really good. I think I might try to use dates in place of the agave as a sweetener. I have recently heard that agave is not actually raw, that to get it's sweetness is has to be heated above acceptable temperatures to be considered raw.If anyone has heard different feel free to let me know.

squirrely girl, i got the oil at my local co-op...i can't beleive that they don't have that on the websites! i'm sure you could use fresh mint leaves even, but it won't have the same effect.

This sounds fabulous. Where do you get the peppermint oil? Even on most of the raw food websites all I can find is the extract.

SWEET! Where do you live? I really have to get myself an ice cream maker too...your recipe inspired me so much that I started plotting some fabulous ideas of my own. Oh, to have raw friends to hang out with that are stoked with raw ice creams!

Bah! Audrey, come on over! Actually yes my friends and I have the ice cream socials...but each week would be the same. Each dish was like a thick smoothie, always banana based in the most overwhelming way. I was SO determined to find a great ice cream maker and impress all of my friends with my raw ice cream! I took my batch with me to both jobs today and people fell in love with me. Ha! I'll make another batch and give you a buzz to come on OVER!!!

You could use young coconut I'm sure. I wanted to imitate a raw vegan version of dairy based ice cream, which involves a lot of creams and fats...Trust me, you can only eat a little bit at a time...but i understand!

Vegasgreen: the integrity of this dessert will not be comprimised if you use dates. As for my personal consumption of raw agave...i'll look into that, thank you!

Oh boy, this sounds great! When you say coconut milk, do you mean the coconut water, the liquid inside of the coconut, or do you mean juice the meat to get coconut milk?
