Recipe Directions

1. Combine all the dry ingredients in a pretty bowl. It works better if you’re using the unsweetened coconut FLAKES as opposed to shredded coconut. It gives it more body and chewy/crunchy texture. The sea salt and vanilla powder are optional; they just sounded good to me this morning – especially since my nut milk was plain ol’ cashews and water.

2. Top with sliced banana. Drizzle with maple syrup, if desired. Top with nut milk.

3. Dig in!

I was looking for something just lightly sweet for breakfast, and I wanted something to chew on instead of slurping a smoothie. This was mostly a “throw a handful of whatever I’ve got in a bowl” type of recipe, but it came out really yummy. I would assume that you could premix this in a bigger batch and then stick it in the fridge or freezer in an airtight container for a yummy insta-breakfast. (Good for traveling too, perhaps?)

This looks great - I'm going on a ski trip with some work friends who all follow SAD and I was wondering what I would do for breakfast. I was invisioning the looks I would get when brought out my noisy blender and a package of fresh fruits and veggies for breakfast! HA! They already poke fun (in a nice way) about my healthy lifestyle. This is a WONDERFUL alternative that will definately help me fit in a little better. Thanks!!!!
