What we in America call a ‘Greek Salad’ is really a lettuce salad with Greek Inspiration. No matter what you call it. it’s fantastic. The secret to this salad is the cultured cream cheese recipe that I posted earlier – allowed to dry out slightly in chunks it’s a pretty darn convincing...

Mix vegetables together. Put ‘feta’ cheese chunks into the salad. Pour the vinegar and olice oil over the salad, then sprinkle on the oregano, salt and pepper. Toss lightly and serve.
