SWEET POTATO LAYER

1. Blend all ingredients in a blender until smooth.

CASHEW CREAM LAYER

2. Blend all in a blender or food processor until smooth. Add more water if needed.

ALMOND/DATE CRUNCHY LAYER

3. Place in a food processor and combine until almonds are broken up well but not fully combined with dates.

4. Layer in a glass or dessert dish: one layer sweet potato, top with cashew cream, then almond date crunchies. Make as many layers as possible.

this really is one of my favorite recipes. :9 it's also delicious with fresh strawberries cut up into it. MMM.... having for breakfast right now.

We tried this today and the first words out of my toddler's mouth were, "yuck" and he gave me the "thumbs down" sign. Think this would be better with a fruit rather than sweet potato.

THIS IS SO GOOD!!! :D i'm new at the raw food thing, and i was very skeptical about raw sweet potato tasting good, but this is awesome.

I tried this. I LOVE IT. The sweet potato really has a smooth consistency, easy to blend, and a good neutral flavor. It doesnt taste like a bitter raw vegetable. It marries well with the orange and spices. The only change I would make would be less agave, just so i can taste the sweet potato a little more.
