This YUMMY Spanish rice recipe can be made in a pinch, without pre-planning or sprouting anything. It looks and tastes as good as any spanish rice I’ve ever had. Cayenne Pepper can be added for extra spice.

Recipe Directions

In food processor, blend the avocado with the spices and cilantro. Pulse chop in the cauliflower untill at a ricey consistancy. Mix in diced tomato pieces, and enjoy!

divinemissem, I always find it's getting the mixture with just the right amount of oil and avocado that makes cauliflower work in this recipe. That way you get the texture of couscous and the oil makes the cauliflower easy to eat.

Spanish rice would be good if you put a few peas, onions, and carrots in the bottom of a cup and then put the rice on top. Press down and then put the rice on the plate in the shape. I would consider dehydrating the cauliflower with oil for an hour or so first and adding some lime to the avo to keep it green. Do you have any suggestions for what you serve this with? What is tomato powder? That sounds interesting!

Is the cauliflower really like cruciferousy(?) in this? I´ve made a couscous like thing with cf before that I just couldn´t eat. But the whole spanish rice thing sounds amazing.

I don't taste the cauliflower when I make it, but maybe that's just me. It doesn't taste like cauliflower at all. I find that the spice amounts really vary based upon your salt tolerance/love of cumin. So experiment.

Tomato powder is just dehydrated tomatoes, ground to a powder. I use sundried tomatoes, but it's hard to chop them in the FP, so I get big chunks of sun-dried tomatoes...but I like weird textures, so I'm fine with it :)
