Recipe Directions

1. Blend nuts in Cuisinart with garlic, onion, and red pepper. Add mushrooms. Add fresh basil (2 tablespoons). Dry basil and garlic is okay for this one. I added a handful of sprouted quinoa and sesame seeds. The sesame seeds never sprouted but were pretty soft as I soaked\rinsed them for 3 days. They taste very savory and sweet. I’m not sure if that was from the vidalia onion or the grain. Taste the mixture before dehydrating to make sure it’s good.

2. Dehydrate for 3-8 hours depending on how hard you want them and how big the balls were. I made small balls so they were ready in 3 hours.

3. Arrange meatballs on top of spiralized zucchini and top with your favorite sauce. Make sure and do not add the sauce to the meatballs too far in advance. The balls will get soggy and fall apart!

Notes:

These would be good for a party with toothpicks in them and a marinara dipping sauce.

Use two to 4 zucchini depending on how big they are.

Hint: Toss a little olive oil, garlic, basil, and salt on zucchini to make it more flavorful.

Oh. My. God. Writeeternity, these are SPECTACULAR. Really amazing. All I can say is WOW. These are going to be a staple for me. And those who don't have all the ingredients, try them anyway! I didn't have everything, so I subbed tomatoes for the red peppers, and I left out the quinoa AND the sesame seeds. They are still superb! I had a Really hard time not just eating the whole batch out of the blender, and for me, that never happens with savory recipes!

I'm already thinking of other versions from other culinary traditions, maybe a garam masala version and a lemongrass/galangal version. YUM!!!!

I signed up to this recipe board just to let you know how good those meatballs are. They are fantabulous! I have some in the dehydrator right now. They're not even done yet, but they taste out of this world good. The picture looked amazing, so I had to try them. I was not disappointed. I will definitely be using the meatball recipe as a base for other "meat" type recipes like burgers and such. Thanks for posting it.

OMG! that looks devine!!!I have a cocktail meatball recipe i love that i had given up for dead( teehee , pardon the pun) because of the meatball requirements, all my experiments have been pastey or hard as rocks...you have me back on the concoction highway! i might try a little flax for stickability... thanks!!!!
