I posted here looking for a gluten free, fat free bread alternative, and this is what I came up with.
In food processor, combine one small zucchini, two ripe bananas, and juice of one lemon. Puree, then stir in 1 1/2 cups flaked oats (not all oats are gluten free, so if you have celiac you need to check that) and 1/2 cup raisins. Spread out on "fruit leather tray" and dry @ 95* for 8 hr, then flip over and carefully peel off the "teflex". Keep drying to desired consistency- maybe only 2 more hours if you want to keep it bendy.
