My friend, Megan, has joined me on the raw food journey and has been the main inspiration for this decadent dish. She was also a great help as we prepared our layers of cream, blueberries, and bananas. We created this as we went, having only her grandma's blueberry banana pie to replace with an organic raw version. This pie will definitely now be in the rotation of delicious raw desserts and introduced to granny of course! For more recipes visit my recipe blog http://amandanicolesmithrecipes.blogspot.com/
Summer tarts are wonderful dishes that can easily make for a nutritionally dense and satisfying main course. While many versions can be made by using additional ingredients, my favorite is the invigorating and scrumptious spinach tart with marinated tomatoes! Made with cashews and almonds, this nutty tart can provide significant amounts of healthy fatty acids that can sometimes be lacking in an exclusively vegan diet. Cashews, for example, are loaded with minerals, including magnesium, manganese, phosphorus, iron, potassium and zinc.

A simple, scrumptious apple pie that will have you wanting more, but it's okay because it's healthy! ;-) This crust is one of my favorites because it tastes like a graham cracker crust. The filling is sweet, sour and warm all at the same time. It is definitely a flavor explosion that I enjoy very much. The dehydrated apple chunks give a wonderful texture and also give an added burst of sweetness. I hope you enjoy! Visit my blog for more recipes! http://amandanicolesmithrecipes.blogspot.com
I'm in the UK for the summer, and discovery are one of the first apple varieties to come into season. They are so much fun because their flesh is tinged pink! My boyfriend's tree is providing us with loads of them, so I came up with this. It's simple, just sweetened with dates and really tasty.
Of course, you could use any type of apple, but the tarter the better!
