Macadamia Cashew Alfredo Zucchini Pasta with Sundried Tomatoes

Serves 2This recipe is really quick and easy. My friend had a variation of this recipe that involved cashew butter, but I thought I’d create my own version. You may find it to be slightly sweet, if so you can use more pine instead of macadamia nuts (thanks for the suggestion queenfluff!) or add some herbs.

1 for pasta, the sauce makes a lot thoughthe sauce is creamy but with the beet it gets kinda chunky.
