What better time to share this simple salad recipe then when the farmer’s markets, roadside stands, and grocery stores (if you must!), are brimming with tender ears of sweet corn. I created this recipe last year after learning from a local farmer that you can eat sweet corn raw without it ever touching a grill or a pot of boiling water. I was able to convert many naysayers last summer, and now it’s time for me to make a believer out of you!
I had been dreaming of a recipe I stumbled across on raw epicurean for months, I had finally attempted to it. I made a few alterations, and this is how it turned out! Absolutely delish! Even my cooked-veggie boy loved it. It will defiantly be made again in my kitchen.
An experiment to make Southern Cheese Grits raw... I think it would be better with some onion, garlic and cayenne pepper as I love hot and spicy...
Coleslaw is one of the foods I loved to eat straight from the tub!
Using the recipe for Avocado Mayonnaise (http://goneraw.com/recipes/3689-Avocado-Mayonnaise) I have made a delicious coleslaw which is perfect for romaine wraps, adding to salads, using as a side dish, spooning onto crackers (or little gem lettuce leaves) or just eating as it is.
