Mango and passion fruit must be my top 2 favourite fruits! So I was really keen to get them in a raw dessert together. Adding a bit of coconut rounds out the Caribbean influenced flavours really nicely. This is a dessert to be savoured.

OK – So this shake is absolutely scrumptious. I cannot rave enough about it.

This shake is decadent, rich, creamy, and delicious. If you want to make this shake colder, add in some ice cubes. If you want it richer, feel free to get a bit more heavy-handed with the Cocoa – that is for you self respecting chocoholics out there – motto being “the richer the better”. If you want it sweeter, feel free to tempt fate. But I will warn you – for me, this shake got sweeter the more I drank it. And because I was a stellar pig and devoured the whole trough on my own (two full glasses), I found that less, really is more! My sister TOTALLY disagreed and could have had more of her chocolate rich version! Either way – I’ll take out a stake in this shake!

Macadamia and Semi Dried Tomato Pesto

It doesn’t get much easier than this delicious pesto. This version from The Australian Macadamia Society is a winner…and SO easy. Literally, throw everything in the food processor; then blend and chow! No chopping, no mess, no fuss. And best of all – it is absolutely phenomenal. You won’t believe something so easy can have so much flavor. It is just to die for. Try to purchase semi-dried tomatoes in olive oil, as it is much healthier. This pesto can get very rich very quickly. So start with one tablespoon of the jar oil, and gradually pour in the olive oil into the top of the food processor; pulse and check; blend and taste until you get your perfect blend.
