This Italian soup warms the soul and is such a pretty light green...
I was inspired by Martha Stewart's spinach & mushroom soup she made the other day on her show... She served it over Buckwheat Noodles and it wasn't Italian in flavor.. Her recipe contained shallots, garlic, (butter or EVOO, not sure which), Chicken stock with the mushrooms and spinach... It of course was cooked and not Vegan...
This savory smoothie or soup is VERY warming and REALLY high in antioxidant and anti-inflammatory power! Plus, it boasts a lot of taste complexity and it was quick and easy to make. I didn't take a picture because - guess what? It looks like a green smoothie!
A warm soup made in your high-speed blender - super easy and super yum!
Being ill the past few days, I have grown tired of "smoothie soups" so I decided to try something....a broth!! Basically just juiced "stock" veggies I had available and watered down to taste. The possibilities are endless!
Today I used this base with a mass of spirilized carrots, chopped tomato and sprouted mung beans warmed to body temp over a double broiler...stupendous!!
A wonderful creamy base of avocado and lime with a crunch of fresh veggies.
