so named because when you de-rib the bottom of the lettuce it creates two arms that are then folded over each other, as in a big hug. these are REALLY satisfying and simple! serve with arugula pesto, red vinegar, and pink-flecked pilaf.
I whizzed this together and it was really tasty. Reminded me of “egg in a cup” if anyone else knows what that is?
Sea spaghetti is a delicious and nutritious seaweed. It looks like spaghetti,and when soaked has the texture of pasta “al dente” style. I wanted to eat it like spaghetti, so I made a nice marinera sauce, and layed it on a bed of lettuce. You don’t have to add the avocado, or the pine nuts, or the olives. They are just for garnish, but they taste real good with the dish. You can also ground up the pine nuts to use as “parmesan cheese” if you’d like. Your choice. Enjoy!

Mix and mash everything into a bowl and enjoy!
I always feel really good after eating this. Don’t be afraid to really load up on the dulse flakes, it mixes in really well and adds a nice saltiness.
