This recipe is completely Raw and Healthy. All you have to do is mix your ingredients and refrigerate. I love to put a scoop of Raw Ice Cream on the side with different types of Berries! Also I want to point out that the crust can be made with any filling. The brownie can be made separate and of course you could always use the cashew and fudge sauce for covered strawberries. So many options, the best option is what is local or on hand. Make sure your ingredients are Raw and Organic for the healthiest option.

Raw Mini Ice Cream Cakes

Our Dad brought over a tub of organic chocolate ice cream for us the other day and it has been staring at us for the past 2 days and we can't eat it because it has cream in it! We eventually broke down and had a couple bites each and then locked it in the freezer. Who knew ice cream could cause so much distress? We handed it off to one of our roommates and fed our crave by making mini ice cream cakes! We made two versions: Banana-Mango and Cinnamon-Chocolate.

To make the mold we laid out wax paper on a cookie sheet (you could also use a plate) and we used metal circular cookie cutters.

Chocolate Cake (with bananas, optional)

I made this cake for my birthday last week, and my raw friends found it really delicious. I like it too, because I love the combination of bananas and chocolate. If you do not like bananas, you do not have to include them.

While making the cake, you can enjoy the "leftovers" as delicious raw drinks: The water from the 2 young coconuts, as well as the soaking water from the dates which is nice and sweet.

BTW, what is the difference between a blender and a food processor?
