Several I didn't find a mock tuna recipe using carrot pulp that seemed fast and easy enough, and since I was in a hurry I made my own. Use in sushi, as a spread or pate for crackers, or in a sandwich.
I'm not adding a picture because we all know what mock tuna looks like. It looks like tuna!
Carrot Toona Salad

This tastes fabulous! Even my non raw mom said she liked it better than regular tuna salad! You can even make sushi rolls with it. I got the recipe from my friend Rashimba who makes it at the Food Co-Op were she works. It can be a totally raw recipe if you make your own raw mayo, but I love the Veganaise.
