Cacao Recipes
I’m actually still in the process of perfecting this, but here is what I started with and it is already a family favorite. This is best kept in the freezer and has a nice soft/crunchy texture to it. The hardest part about this recipe (besides needing the right equipment) is not eating all the brownie batter while waiting for it to dry! I barely had any left to make this piece you see here because of my nibbling! (So I actually doubled the original recipe that I made. I hope it turns out the same.) If you don’t want to go through the trouble of making and assembling this with the vanilla cream, it also makes great brownies (an try putting jungle peanuts on top!) Yum!
This recipe is highly adaptable as you can see, but it turned out really well.
I actually got the idea for this drink from a recipe I found through the Sunny Raw Kitchen site. The recipe was called “Best Coffee Ever”. It was very good, but a little too thick, and strong. So, I made some changes after many trial and errors with the recipe. I finally came up with this rendition, which I truly found delicious! I hope you do too.
One note: I recommend you use “heaping” scoops of the raw cacao powder, and heaping tablespoons of the raw carob. It’s okay to use a little more of both then not.

This is SOOOO Amazing! It makes an incredible pudding by itself. Or put it in a nut date crust for a quick, easy & Delicious chocolate pie – like in the picture.

So, here’s the story: For the past few days my roommate has been walking around munching on a bag of Newman’s Own Hint’O Mint sandwich cookies. I’ll admit it, at first I was jealous. But then, I got inspired! The result turned out fabulous. The filling tastes exactly like the center of a York Peppermint patty.
I got this recipe from “The Raw Chef Blog” by Russell James. I found it when I was searching for a Raw Chocolate Easter Egg recipe. We made 6 butterfly chocolate pops, 1 Easter Bunny pop, 12 solid, large eggs, and filled 3 minature mould sheets. It made our Easter! Thank you Russell James!!!

This is a HEAVENLY ice cream! Luv says it tastes like the Brazil Nut Chocolate Gelato that she tried at Whole Foods before we went RAW. Very Yummy! Hope you like it.
This is adapted from the “I Am Luscious” recipe in “I Am Grateful: Recipes and Lifestyles of Cafe Gratitude”. I highly recommend this fabulous book! Every recipe I’ve tried so far has been delicious. I used to cap the amount of cacao powder in my smoothies and nut mylks at 1.5T, but for that pure cacao flavor, I’ve learned you need at least 2T. Why not splurge, you only live once!
Sometimes you just want some comfort food. This weekend was one of those times. I woke up on Saturday morning, wondering what I was going to bring to the raw pot-luck that day. My mind was filled with thoughts of easy to make, savory stand-by’s, but nothing jumped out at me. As I looked at the what I had in the cabinets, it dawned on me that it might just be a comfort food kinda day.
I couldn’t be more pleased with how these turned out. Folks at the pot-luck gave them a big thumbs up and of course, the plate was empty when the pot-luck was over. Soft, sweet, chocolaty, just like how a brownie should be, but with the frosting on top, these will take you right into comfort food bliss!

This makes a HEAVENLY Chocolate Candy Base for those that don’t want/can’t use honey, agave or other syrups (we don’t tolerate those, but can indulge in medjool dates :) ) This makes a nice thick, smooth chocolate that when frozen to set up keeps its form very well & has a great texture. And yes, this also makes a wonderful, smooth & creamy icing for raw cakes!
This is heavenly chocolate fudge sauce, I dip fruit like fondue or pour over sliced bananas or raw ice cream. So delicious and irresistible!
A great alternative to your traditional date square

When I get home from work, it’s time for my daily cacao fix! I have eight different combinations I use, and this is one of my favorites. I like to start out with a tablespoon of bee pollen straight, and then I follow it up with this little piece of heaven. Warning: This is very mildly sweetened, so many of you will need more goji berries to make it palatable for you! Also, I highly recommend the Artisana coconut butter, but if you use coconut oil, you might also need more gojis to sweeten it up.
This is an excellent raw, completely solid chocolate bar. It can also be made into chocolate chips (that are errily identical to Hershey’s) by dropping the mixture onto a parchment/waxed paper/plastic wrap lined cookie sheet with a pastry bag and fine tip.
Add vanilla and almonds for a Hershey’s Goodbar-esque bar
Add mint extract for a deliciouly smooth minty bar

This is a deep rich chocolately smoothie which helps to take the place of my dark cup of morning coffee!
I’m always drinking chocolate shakes (ok, not always, lol) but this is utterly scrummy…like a melted, yet still half-frozen, chocolate ice-cream.
I was trying to make chocolate pine nut yogurt, but I ended up making a richer version of this delicious nut mylk instead! Nut mylks made with coconut water rule! You can use any kind of nut, but a high oil content nut like the ones below are best if you want a creamy nut mylk.
This is an adaptation of Angie’s great dipping chocolate for the serious chocolate addict. This should take care of those early “I need chocolate now cravings.” It will harden almost right away in the vitamix to the consistency of soft wax so you can push into little molds or roll into balls for a daily fix. I ate it right away (hence, no photo) but I’m guessing you could roll this out with a rolling pin and cut shapes, bars, etc. I’ll play with it some more, take pics and update.
This is a very rich, almost cream cheese style icing or spread for fruit. These measurements are rough, I just added everything to taste. I was very surprised at how much like real icing this tastes! Would be awesome on raw carrot cupcakes!
This is a great salad I’ve been making lately. It seems to really sustain me for a long time. Play around with the amounts and make it best for YOU!
Easy and quick cookie/snack bar made with only 3 ingredients and a processor! You could use dates instead of raisins if you wanted to – I haven’t but you could!
