Jicama Salad
Serves 6 (as a side)
Jicama is fantastic all alone – in this salad, it is something quite special.
Ingredients
- 1½ cups jicama, peeled and cubed
- 1 large cucumber, sliced
- 1 orange, peeled and cubed
- 2 tablespoons fresh lemon juice
- ¾ chili powder
- celtic sea salt, to taste
Preparation
- Combine jicama, cucumuber and orange.
- Toss in the chili powder and fresh lemon juice.
- Cover and place in refrigerator for at least 2 hours.
- Before serving, add Celtic sea salt.
