Jicama Salad

Serves 6 (as a side)

Jicama is fantastic all alone – in this salad, it is something quite special.

Ingredients

  • 1½ cups jicama, peeled and cubed
  • 1 large cucumber, sliced
  • 1 orange, peeled and cubed
  • 2 tablespoons fresh lemon juice
  • ¾ chili powder
  • celtic sea salt, to taste

Preparation

  1. Combine jicama, cucumuber and orange.
  2. Toss in the chili powder and fresh lemon juice.
  3. Cover and place in refrigerator for at least 2 hours.
  4. Before serving, add Celtic sea salt.
