Raw gnocchi with spicy ginger marinara

Serves 2 - 4 beautiful beings

An indulgent, rich, flavoursome winter comforter. It is perfect on a cold winters night snuggled up on the lounge with a doona and your favourite furry friend.

Ingredients

  • 4 cups Organic almond flour
  • 1 tablespoon Fresh lemon juice
  • Garlic powder to taste
  • 1 teaspoon Celtic sea salt
  • Onion powder to taste
  • 2 Large ripe organic tomatoes
  • 2 Sundried tomatoes
  • 3 Soaked dates
  • 1 Clove of garlic
  • 1 slice Fresh ginger
  • 1 tablespoon Apple cider vinegar

Preparation

Gnocchi:

- Mix almond flour with the garlic and onion powder, lemon juice and celtic sea salt. Add small amounts of purified water until a dough forms.

- With clean hands, shape dough into small balls. Refrigerate.

Marinara:

- Blend the rest of the ingredients together, adding small amounts of purified water at intervals, until the sauce reaches the desired consistency. Personally the thicker the better!

- Pour sauce into bowls and drop the gnocchi balls in.

- Garnish with sliced raw mushrooms, basil leaves and cracked black pepper.

Yes you can buy raw almond flour or almond meal from your local health food store or market. If preferred, just chuck your raw almonds into a processor/grinder and grind into a flour. It can be stored in an air tight container until needed.

I made these for lunch today with the marinara sauce, they were so good and rich mmm, I cut the almond with flaxseed meal and I did not have flour, I used my small food processor which does not grind things to a fine flour. So the almond-flaxmeal was chunky. I used real garlic, real shallots b/c I do not have onion or garlic powder and its just not available here. Well, they were scrumptious. I had been eating quite lightly these days and today I had an appetite and this was a rich, satisfying and comforting meal. Thank you so much!!!

This was my first Gone Raw recipe and it wasn’t good. The Gnocchi balls were delicious but the sauce was bitter/sweet/weird. Next time I’ll cut the ACV and maybe even the sun dried tomatoes.

a really great way to make your own almond flour is to use a coffee grinder…I use it to grind all my seeds & nuts :)
