Serves 4

This is a quick, easy and delicious salad. I first saw this prepared at a raw foods class given by Dr. Ariel Policano and have been enjoying it ever since.

A small portion of the salad is a great side, but it is also filling enough to serve as a stand-alone meal.

Ingredients

  • 1 head kale, shredded
  • 1 cup tomato, chopped
  • 1 avocado
  • 2 tablespoons grapeseed or olive oil
  • 1 tablespoon lemon juice
  • celtic sea salt, to taste
  • ½ teaspoon cayenne

Preparation

In mixing bowl, toss all ingredients together. Mush everything together (with hands) to created marinated/wilted effect on kale. This makes it much tastier and easier to digest.

I just saw a really amazing looking take on this salad by The Raw Chef – Wilted Kale Salad with a Creamy Chipotle Dressing

I didn’t have any avocado on hand, so I used tahini instead. It’s delicious! I also tried it with some raita I made (using cashews instead of yogourt) – another pure delight!

Wow, I am definately going to try this since I never have eaten kale before. I really did not know that it could be eaten raw. LOL

I bought kale last night with my groceries because it was cheaper than romaine, can you believe that? I was worried the taste would be too strong but I make this recipe and it was fantastic! I love the heartiness of the kale, so much “meatier” than romaine, LOL.

I’ve really started to incorporate more kale in my diet. If you do like kale, try out a green smoothie. I love it!

This recipe looks great and I love kale. I put it in my smoothies all the time. Especially the dino kale. I am not keen on the other kind of kale. The purple one. I put it in the smoothies but I don’t think it would be good in this salad. Anyway.. I am going to try it tonight! Thanks kandace. :)

Alissa Cohen has one like this. It’s really good. You have to really get your hands in there and molest the heck out of that kale!

Quite true, Pam. The more you mush with your hands, the better the salad is!

From the picture, it looks like the avocado gets completely mushed up – there are no chunks in the salad. Is that correct? This looks great – I bought everything to make it and want to make sure I do it right. Thanks!

We added more liquid (olive oil & lemon juice) and enjoyed it a day later.

I’ve made this a few times and love it. Easy to make variations, too! Today I added rainbow kale, lettuce, red bell pepper instead of tomato (none ripe yet), cucumber, shredded zucchini, and hemp seed for an awesome dinner salad.

Massage the kale for a long time – 10 minutes – to break down the fibers and make it nice and soft. I massage it for 5 minutes with just the olive oil, then add the avocado and massage that in for the last 5 minutes, then top with my favorite veggies: tomatoes, marinated mushrooms, chopped red onion, etc. It tastes really good and will fill you up! Also it keeps in the frig for a couple of days I have found out. Skip the cayenne completely if you don’t like heat – it doesn’t need it, but for spice lovers throw it in.

Well this was my first experience with Kale (other than a salad I bought at a health food store which was ‘eh’). I loved it so I made another batch right on the spot. The first batch I did exactly as the recipe said (except the hubby loves pine nuts so I added some of those). The second batch was a little different (I’m still learning so if any of this isn’t raw SORRY!) I did the base recipe but replaced cayenne with a fresh Thai Chili Pepper minced up nicely, and garlic and sesame seeds. It was excellent! I will be taking it to work tomorrow for lunch! Thanks!!

I loved this! Thanks jsorensens2 for the tip on the 10 min. massage I have tried to make this type of salad before and didn’t like it because the the toughness of the kale but after massaging for 10 min it is almost like creamed spinach consistency. yum
