Chocolate Mousse

Makes 6 cups

Ingredients

  • 10 dates; pitted and soaked for 2 to 3 hours
  • 4 avocados
  • ½ cup pure organic maple syrup
  • ⅓ cup agave nectar
  • 1 cup raw cacao / organic cocoa / carob powder
  • 2 tablespoons vanilla
  • 1 teaspoon celtic sea salt
  • filtered water / almond milk

Preparation

In the bowl of a food processor, blend dates and avocados until smooth. Add remaining ingredients and blend. Add water or almond milk as needed. (approximately 1/3 to 1/2 cup) Use water or almond milk to reach desired consistency. Thicker consistency could be use as icing on a raw cake. Lighter consistency is almost like eating chocolate pudding. Can be refrigerated for up to 3 – 4 days.

Note – We have not wanted this in awhile. But we whipped some up tonight. We omitted the maple syrup and raw agave nectar and used 2/3 cup of Organic Raw Blue Agave instead. The family could not taste a difference. So Good!

Some people are turn off by the dates or avocados.But then once they try it, they cannot believe it was made with avocados. Try It! You won’t believe it is Raw!

maple syrup – is not raw cocoa powder – is not raw. Which you could substitute with carob powder. vanilla extract – is not raw. Please note you should make sure your extract has no alcohol. Agave Nectar – is not raw. It is processed at roughly 140 to 160 degrees Fahrenheit. You want to look for Raw Pure Organic Agave Nectar – which will say it is specially produced at tempertures below 115 degrees Fahrenheit.

Our family likes to use the maple syrup from time to time as a sweetner. We also do not mind using cocoa/carob powder or vanilla extract from time to time either. I think it comes down to personal perference. But for those new to raw…x5live is correct. Maple Syrup is not raw. Thank you x5live for mention this.

Thanks simplyraw, I didn’t know they actually were making a raw agave nectar. I see it so often in raw recipes and use it in moderation but know that is not actually a raw product. Now I just need to convince my local whole foods to carry it. LOL I still do use some non raw items like maple syrup, cocoa powder and agave from time to time, I try and make sure they are at least organic but to me moderation is the key and your chocolate pudding looks devine!!! Making it tonight! thank you

You are so right about the avocados. This is similar to the recipe I make from Jenifer Cornbleets book and I would never in a million year have thought that avocados could taste so darn good!

YUM YUM!! I should not have said anything to my non raw son though about the avocados he just could not get past them being in the pudding. But all my friends raved about it and loved it. VERY VERY RICH though so I’m toning it down with a bit of nut milk tonight. I’ve got two more recipes to do tonight then I’m done this weekend for my raw preparing frenzy. Bellasera…..I am so happy to hear you and your friends liked it! I loved what you wrote earlier about moderation. I highly agree that when you are making the switch from SAD to RAW…moderation is the key. I think as time passes the less and less it becomes that way. You start to lose interest in those things that you were taking in with moderation. But every once in awhile when our family does have that sweet craving, this chocolate mousse sure does the trick. I apologize for the richness. However, I think you will find there is plenty of room to tweaked it to your personal perfernce. Once again, so happy you found it Yummy!

Oh Yeah, I have also been meaning to try the chocolate mousse in Vanessa Sherwood’s chocolate tart crust. I think that would really be a great hit. I just haven’t gotten around to it yet. Hey Deeddlit, Just apply your measurement slowly to reach desired sweetness or taste. The recipe really is an easy one to play with to fit your preference.

We do not eat honey, but I am sure you could use it as a substitute.

I too was/am turned off by using Avacado’s in this way – probably because i’m in love with Guacamole on my “Taco Salad”.... but, i’m going to do this once i’m done with my master cleanse (6 more days)... with that being said, i just want to comment on maple syrup not being raw. I started my Master Cleanse and felt horrible for the first 2 1/2 days. I finally realized that it was the maple syrup. I immediately stopped using it and substituted Raw Agave for it and now i feel fabulous. I think i was on a sugar high. I’ve been raw for about 6 months now and barely use sweeteners (agave is the only one and it’s sooooo low in glycemic index). So, my body was not liking the maple syrup and the smell of it actually started to repulse me. On my last 3 cleanses, i was fine and never had this problem, but i was eating normal American food… odd, huh? Anyway, i can’t wait to try this pudding/frosting. I hate dishes that take too long, so this is perfect :) Thanks!

I love this recipe…it works fine with just raw agave and a little raw honey.

I think when it comes to raw…don’t be too fanatical about it when you first begin. Use your maple syrups and all that jazz, but it is good to know what’s 100% raw and what’s not. Just don’t worry about being militaristic with it, because then it’s no fun :-( Either way, there are plenty of raw alternatives for most anything.
